About Our Coffee
Pollyanna Coffee Roasting wasn't quite a developed concept in 2024, but it was always on the minds of Brian and Ryan as soon as the brewery plans came together. Sparked by a mutual interest in adding to the Craft element of the company, Pollyanna was always going to be more than just beer. We added a spirits program in 2020 and a coffee program in 2024. Our Head Coffee Roaster, Randy Douglas, expressed interest in springboarding a coffee program after 6 years of slinging beers in the taproom, aligning with interest of Brian and Ryan. Starting with the foundation of Mill City's Coffee Roasting School in Minneapolis, Randy's trial and error, and a determinded drive to learn about all aspects of coffee, Pollyanna started selling coffee beans in November of 2024 across our four Chicagoland locations. We focus on sourcing quality specialty coffee and providing freshly roasted beans along with an approachable educational aspect. We hope to provide affordable luxury to both start and end your day optimistically!
