12oz Peru Decaf MWP Lima

This Fair Trade and Organic single origin decaf coffee from Peru brings notes of mild fruit and graham and is an approachable cup for all coffee fans, complimented well by milk or cream.  

Grown at an elevation of 1650-1800 MASL, this is a washed coffee from the region of Cajamarca, Peru recognized by the President of the Lima Coffees exporting organization, Rony Lavan. 

Mountain Water Process Explained:

In order to remove the caffeine, green coffee is soaked in a water solution, which removes both the caffeine as well as other solubles in the coffee such as flavor compounds. The water is removed from the seeds and run through a special filter that captures caffeine molecules and allows them to be strained from the solution. This solution containing no caffeine but still holding onto the flavor compounds is then reintroduced and absorbed into the green coffee seeds. The coffee is then dried again and prepared for export. This facility is called Descamex, located in Mexico.
